The 2017/18 growing season was legendary, with the hottest January on record and one of the best flowerings in living memory. Due to this unusually hot growing season, plentiful bunches of evenly ripened berries were harvested nearly two weeks earlier than usual. It was a race against the weather to ensure our grapes were tucked away safely in the winery before the spring rain soaked the vines. This extra rain would have watered down the bright acidity in the grapes, which is an important characteristic to this wine.
X Marks the Spot
Marlborough Sauvignon Blanc is the white wine grape variety that put New Zealand on the international wine map. Located at the northern tip of the South Island, Marlborough is renowned as one of the great Sauvignon Blanc regions of the world.
Our treasured Sassy Marlborough Sauvignon Blanc fruit is sourced from selected vineyard sites in Marlborough’s Wairau Valley, an area renowned for its bold, aromatic fruit and subtle minerality. Rich, fertile soils in the Wairau Valley support luscious grape canopies that produce powerful, punchy styles of Sauvignon Blanc.
In addition to the land, climate plays a large role in Marlborough’s distinct terroir; the Wairau Valley has one of the sunniest and driest climates in New Zealand. A rare combination of long, dry summers; bright sun; and cool, clear nights provides perfect conditions for growing intensely-flavoured Sauvignon Blanc grapes.
Mahi mahi ceviche with pawpaw and fresh coriander. Fresh white fish fillets ‘cooked’ in bright lemon or lime juice are the perfect accompaniment for the bold flavours of Sassy Marlborough Sauvignon Blanc. For a Pacific Islands twist, add a dash of coconut cream for an indulgent creaminess that balances the naturally crisp Sauvignon Blanc and citrus juices.
Serve with pawpaw, a tropical-tasting fruit native to North America. If foraging in America isn’t in your summer plans, substitute with papaya or even feijoa—it’s your treat, make it to suit your taste!
Each block of the vineyard was harvested separately and then vinified, or made into wine, separately in order to preserve the distinct expressions of our land. Afterall, our winemaking philosophy is to emphasise everything that comes from the vineyard.
The crew then used one specially selected yeast to highlight the coveted fruit-forward qualities of Marlborough Sauvignon Blanc, and another yeast was chosen to add texture and weight to the wine. Next, precisely timed batch fermentation retained the natural sweetness of the juice, to balance the classic Marlborough acidity. The final blend is a refined, fresh and delicate style with lively acidity.
Alcohol Content: 13% • TA: 7.04g/L • pH: 3.41 • Residual Sugar: 3.0g/L.
Most wines are made with alcohol content ranging between 12 to 15%. At 13%, Sassy Marlborough Sauvignon Blanc is on the lower-alcohol side of this spectrum, and a 100mL glass of this wine equals a standard serving of alcohol in New Zealand. Likewise, with a residual sugar of 3.0 grams per litre (g/L), Sassy Sauvignon Blanc is a dry wine, which means it’s lower in carbohydrates and pairs well with low-sugar food.
Alcohol and sugar are fairly straightforward, but what are TA and pH? TA tells us the concentration of acids present in a wine, where 4 grams per litre (g/L) is considered low (‘flat’) and 8g/L is high (sour). At 7.04g/L, Sassy Marlborough Sauvignon Blanc has a crisp bite! While TA is all about the amount of acids, pH tells us how intense the acids taste. Wines usually range around 3 to 4 pH, so at 3.41, Sassy Marlborough Sauvignon Blanc is right on target for a refreshing, crisp wine.
